Calginetti (Stuffed Fritters)

Pronounced (cowl’-gin-eat). This is a deep-fried Easter cookie. It looks like a ravioli.

Ingredient

Raisins
Orange Juice
Honey
Eggs
Sugar
Oil
Flour
Oil
Powdered Sugar

1can (chick peas)

1/2cup, chopped
1cup, soaked and cut fine
1Rind

to deep fry
to roll cookies

Instructions
Remove skins from chickpeas. Wash chickpeas in clear water. Mash and add salt, chopped nuts, raisins, orange rind and honey. Let stand overnight. \r \r Crust: Mix eggs, sugar, oil, baking powder and flour. Roll dough and place 1 heaping tablespoon of filling, an inch apart, on the dough. Fold dough over, cut around the filling with a pastry wheel (as in making a ravioli), press the open edges down with a fork. Deep-fry in oil until golden brown. Sprinkle with powdered sugar.\r
