Calginetti (Stuffed Fritters)Angie Dellos Pronounced (cowl’-gin-eat). This is a deep-fried Easter cookie. It looks like a ravioli.

Instructions | Remove skins from chickpeas. Wash chickpeas in clear water. Mash and add salt, chopped nuts, raisins, orange rind and honey. Let stand overnight. \r \r Crust: Mix eggs, sugar, oil, baking powder and flour. Roll dough and place 1 heaping tablespoon of filling, an inch apart, on the dough. Fold dough over, cut around the filling with a pastry wheel (as in making a ravioli), press the open edges down with a fork. Deep-fry in oil until golden brown. Sprinkle with powdered sugar.\r |
