PizzelleDiane Randesi This cookie is made with an electric iron. This recipe makes a lot of cookies, but they stay fresh a long time in a sealed container. Even though all the Recipe4 say not to use oil as a substitute for margarine, my mother makes the BEST ones, and she uses oil--they turns out less "cake-like" and more light and crispy.
Ingredient | | Margarine | | Eggs | | Flour | | Sugar | | Baking Powder | | Anise Seeds | | Anise Flavoring |
| | Quantity | | 2 | sticks (Oil may be substituted for a lighter cookie) | | 6 | - | | 3&1/2-4 | cups | | 1&1/3 | cups | | 4 | tsp. | | 2 | Tbsp. (optional) | | 2 | Tbsp. (Vanilla may be substituted) |

Instructions | Combine all ingredients, adding flour slowly until batter is just short of "sticky"--(not too dry). Drop by teaspoonful onto electric grill. Close grill tightly for 30 seconds. Remove cookie. (It will be limp.) Cookie firms up as it cools. You can form the cookie into a funnel while it is limp. It will cool in whatever shape you form it. Fill with cream or ice cream. |
